Antioxidants are those compounds, which prevent the natural formation of reactive oxygen species (Free radical) inside the living cells. Main examples of Antioxidants are: Vitamin C, Flavanoids, Lipolic acid, Vitamin E, and Glutathione. Among others, Glutathione (GSH) has demonstrated 100 times more anti-oxidizing capability than simple antioxidants. GSH is a tripeptide of glutamate, cysteine & glycine with an unusual γ-peptide bond between glutamate and cysteine. Enzymatically or non-enzymatically GSH reacts with toxic compounds in living cells to from GSH conjugates. Due to pharmacological importance of GSH, a research project was undertaken at Ulster University for the biosynthesis of GSH, employing a purposely selected Yeast strain.The process for microbial synthesis was optimized for the improved yield of GSH in laboratory-scale fermentation system. The kinetics of fermentation process was studied to standardize an economical biosynthetic-production of GSH. Since pure form of glutathione is degraded by enzymes, the experiments were performed for the improvement of GSH bioavailability in cells. The method of esterification was used to study the bioavailability, since the monoesters forms can be easily taken by living cells.
