Abstract
This innovation project has enhanced supply chain management within a company, added intelligence on the Irish and UK egg markets, developed and commercialised one new egg product, and developed two new egg products, whilst establishing the Knowledge Carrier as a key member of the company’s management team to drive business efficiencies and growth. The project aim was to add value to the company’s surplus and second quality eggs through product, process and system innovations at farm and factory levels. Evidence of achievement exists in the new traceability system for all packaging, chemicals and cleaning products, improved standard operating procedures and documented records at farm and factory levels, new system for forecasting egg quantities within packing, improved supply chain strategy, launch preparation for an egg product, and creation of two egg product prototypes. The knowledge transferred in supply chain management, product innovation and technology, and marketing has helped to underpin major strategic business objectives towards improved traceability and flows from order to delivery (and return processes); a more competitive supply chain; and the development and commercialisation of more added value egg products, whilst providing a better understanding of factors influencing egg and added value egg product consumption in Ireland and UK.
