FUSION project to add value to crab shell waste, develop pasteurised crab meat technology and develop new added value shellfish products

Abstract

This strategic project enhanced innovation procedures within a company, and technical support to its customers. The project aims were to add value to crab shell waste, develop pasteurised crab meat technology and new added value shellfish products. Evidence of achievement exists in the form of the new crab pasteurization technology in operation, increased sales of shellfish products, new crab cake and flavoured machined crab meat product prototypes, a crab meat nutritional quality literature review, and a business plan for adding value to crab shell waste. However, paying customers for crab shell waste products for a free from flesh soil conditioning application and chitin manufacture have still to be found. The knowledge resulting from the project has helped secure new export customers for pasteurised crab products, added culinary and nutritional capabilities within product development, and engaged the company with key EU research networks and organisations with interests in adding value to crab shell waste.
