Biography

Lynsey is the Manager of the Food & Drink Business Development Centre at Ulster University Business School.  Her role seeks to engage with local and international food businesses in research and innovation as well as develop teaching programmes to support the needs of the Food & Drinks industry. She is the Course Director for the MSc Food Design and Innovation (Launching September 2020). 

Prior to this role Lynsey taught on the BSc Hons Consumer Management and Food Innovation degree. She was the coordinator for the following modules: Consumer Marketing Management, Consumer Behaviour, Food and the media, Product Development and Food retailing.

In 2009, Lynsey completed her PhD in food marketing from Ulster University then took up a position as a Lecturer in Business Strategy. In 2010 to 2012, she held a position as a Research Fellow within the Global Institute for Food Security at Queens University Belfast. 

Lynsey is currently the Principal Investigator on two safefood funded projects addressing food safety culture and food brought into healthcare facilities. Lynsey was also the Principal Investigator on the safefood project exploring consumers use of meat thermometers which was used as the evidence base to inform a nationwide campaign on meat safety. She was also the Principal Investigator on the Food Standards Agency investigation into the healthfulness of food retail promotions in Northern Ireland and was part of the research team for a comparable study in the Republic of Ireland, funded by safefood. She has also acted as a co-investigator (in collaboration with Queens University Belfast) on the safefood funded study investigating cooking skills on the island of Ireland. This project resulted in ten high quality publications. 

Her research skills include: survey design, qualitative NVivo analysis, focus groups, interviews and observation studies.

She currently supervises five PhD students all completing projects in the area of food marketing, consumer insight, food poverty and product development.   

Lynsey is a member of Belfast Food Network’s Food Poverty steering group and is a volunteer for the Chartered Institute of Marketing.
